My whole family is together this weekend, and I’m not there. They’re in California, so it’s not “home,” but that is the place I always go to for summer, and this marks the second year in a row I haven’t been.
I miss my family. I also need a vacation. (I’ve had a total of 2.5 days off this entire year). I’m being required to take Monday off unexpectedly, but really, I just want to get away. Even for a little while. And just be in the presence of people I know care about me unconditionally.

Kale is the best! I use kale ALL the time. My favorite is kale stirfry. Super easy, super fast, super yummy. Here’s my “recipe.”
Ingredients
1 tsp cooking oil
1 box of tofu, drained and cubed
1 onion, narrow wedges
3 cloves of garlic, minced
large bunch of kale, chopped into pieces about an inch or two
2 tsp soy sauce
Vegetarian mushroom stirfry sauce
2 spoonfuls (like a cereal spoon, haha) McKay’s beef seasoning
Chili
Directions
Heat cooking oil in a large skillet or wok. Add tofu and fry until browned. Saute the onions and garlic together until tender. Add soy sauce and mix. Add kale pieces, and drizzle the stirfry sauce (I kind of just guess). Then sprinkle the McKay’s over the whole thing and add enough water (1/4 cup or so?) until all the kale is moist and there is some liquid at the bottom of the skillet to help steam the kale. Add chili to taste and stir. Cook until kale is tender. Serve over hot white rice! The End! :)
Recently, a friend asked me, “How can I make kale yummy?” It occurred to me that perhaps a lot of people are new to the nutritional powerhouse that is kale. Maybe you only know it as that curly green thing underneath your potato salad. It does look quite nice, but it is severely underutilized as a garnish. Loaded with calcium, iron, potassium, vitamins A, C, and K, and even some protein, you’d be much better off eating the kale, and tossing the potato salad. Here are five simple things you can do to make your kale yummy.
